This week was packed solid with rehearsals with the Black Dog Bone group (they were famous during the 1970s) and their concert was just last night. I played with a string orchestra and it really was fun. It’s always all about the people. (: ah, the pain of post-concert syndrome. Aside from fun, finals are coming up in less than 2 months! So what do you do to de-stress? Bake, I say! I had a few ripen bananas mottling in the kitchen so I thought of doing something banana and walnut. This recipe from Lovin’ the Oven came in handy. I have always fancied a crumble topping and this had just it. I made a few minor adjustments to taste and the muffins came out superb. Although honestly, the crumble’s the best part.
Banana Crumb Muffins (from Lovin the Oven)
makes 10
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed (i used only 2 bananas and added water)
3/4 cup white sugar
1 egg, lightly beaten
1 teaspoon baking soda

1/2 cup walnuts
For the crumble:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
1.) Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2.) In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3.) In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4.) Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

I've been keeping my eyes out for good "banana" recipes to make for a girl-friend of mine just dropped off 3 HUGE bundles of lightly browning organic bananas that I must do something with ASAP.
